right been asked for this section to be put on here dont know if will help anyone or what but here goes

with me being a head chef in a posh gastro restaraunt if anyone wants any ideas or any help with any sort of food based ideas and tips just give a shout and will give you recipe and method and any ideas to help you get a nice meal going say you got a join of lamb and some veg and wanted a idea of what to do with it for making something different to the normal then through your things at me and will get the answers rolling

also for nacho got a good recipe for space cake lol

Lamb Balti

for 4 people

1lb diced lamb
3 onions diced
small tube tomatoe puree
small tin chopped tomatoes
either a batli condensed sauce mix or
tsp cumin
tsp garra massala
pinch tumeric
cumin seeds
choped corriander
chilli flakes
mild curry powder
small tub yoghurt

put lamb in pan and just cover with water and fetch to the boil and simmer for about a hour till all lamb nice and tender.
in seperate pan fry your diced onions in a little oil till start to soften then add either your balti paste or all the dry ingreints
then add your tomatoe purree and chopped tomatoe and allow to cook out for 20 mins then add your chopped corriander and yoghurt.
combine the lamb you cooked earlier and the water with the lamb into the balti sauce mix you made
and fetch slowly to the boil then serve with some rice a naan bread or whatever you like.

alright, list me up a good chinese..chicken and gotta be something thats isnt too hard/take too long.

ill add: OneStep's 'blood clott heart attack' Bacon sarnie...

- The best quality bacon u can find in the shops
- farmhouse soft white bread from M & S
- bag of mixed salad
- once bacons done stick it on 1 half of the bread an whack a loads of cornish cove chedder on it, stronger the better
- open the salad and laugh then throw it away
- add reggae reggae sauce
- back under grill for 2mins till melted
- eat it
- have a ciggy / joint
- mild stroke / heart attack
- have a few beers to calm down
- repeat back to step one.


and youve got collins ultra deluxe mega combo meal:
- buy a sausage
- buy some sauerkraut
- thats it.

2 chicken breasts sliced
cooking oil
1 carrot, sliced
2 stalks celery, sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 can water chestnuts, drained
2 teaspoons soy sauce
1 pinch ground ginger
1 teaspoon cornflour
3 tablespoons water
cooked rice


In pan, cook chicken in oil, adding vegetables halfway through cooking. Add soy sauce and ginger and continue to cook. Mix cornflour with water and add when chicken is thoroughly cooked. Add more water if necessary. Serve over rice.

I'm still waiting on that Yorkshire pud recipe, enough for four every sunday - eggs wont be problem we have 4 chickens in the back. I rememeber you saying it is little bit different amount from what you're use to serving ;)

SORRY FORGOT THAT ONE DELTA
just broke it down into a small mix

5 eggs
200ml milk
250g flour
small amount sparkling mineral water
in 60 eggs i use 2x400ml bottles

right with that mix forget all the old wives tales of get your trays hot
just put a little oil in your tray and pour mix in cold straight into a hot oven 180/c gas mark 4-5

and let me know how they turn out
for having with beef add a little mustard or horseradish to the mix if with turkey or chicken add a little cranberrie
or make a little extra and have hot with syrup and ice cream for a dessert :)

a quick one for pepper sauce for steaks

2 to 3 tablespoons mixed peppercorns
60g butter
1 shallot, minced or onion
100ml brandy
100ml beef stock
60ml double cream
salt to taste


Crush the peppercorns slightly, either using a mortar and pestle or a rolling pin.
Melt the butter in a saucepan over medium high heat.
Add the shallots and saute until soft, about 3 minutes.
Add the brandy and boil for another 3 minutes.
Add beef stock and boil another 3 minutes.
Finally, add the cream and reduce the heat to medium. Heat through,
but don't allow the peppercorn sauce to boil.
Once the sauce is at your desired thickness,
test for seasoning. Add salt if necessary, then serve with your favourite steak.
